Cookies are my total favourite bake.
The chewyness, The crispyness.
I mean come on, they're so easy to whip up. No fussing with a piping bag, or layering.
You just whack dough balls on a baking sheet and let the oven do all the work.
And the less ingredients the better, which is where these flourless cookies come in.
Perfect for the lazy baker, like me at times, but also good for the gluten free peeps out there.
Only 4 ingredients are needed to make these gorgeous handfuls of goodness, so you have no excuse not to make them.
These cookies will be enjoyed by absolutely anyone, you don't have to be gluten free to love them. Just ask my family. As these were devoured in minutes, Yup that's right minutes.
So if you've had a baking supplies shortage or just a bit of time shortage these can be baked up in a snap for any occasion.
They're so tasty so I definitely suggest you give them a go.
Ingredients:
255g / 1 Cup Crunchy Peanut Butter
200g / 1 Cup Caster Sugar / Super Fine Sugar
1 Medium Egg
50g / 1/3 Cup Cinnamon Chips (if you can't get cinnamon chips just used 1 tsp of ground cinnamon)
Method:
Preheat your oven to 180c / 350f and line a baking tray with greaseproof paper.
Beat together the peanut butter and sugar very well, for about 5 minutes.
Then mix in your egg, again until well combined.
Now fold in your cinnamon chips.
Divide the mixture into roughly 12 balls, place them on your baking sheet and press the tops of the balls down using a fork to give you the criss cross pattern.
Then bake them for 6-8 minutes, being careful not to over bake them.
