Double Chocolate Chunk Cookies

For all you crazy people out there who gave up chocolate for Lent, guess what? It's almost over!!!!

Now I'd love to do something as amazing as give up the dark stuff for a few weeks but lets be honest here, if you've read many of my recipes there's actually very few that don't include anything cocoa related.

Yeah I am majorly lacking in the willpower department, how I'm not the size of a house really does astound me. However I do have a few years left on this planet so there's still time.

So for you lot out there who are just like me and have embraced your lack of chocolate willpower by not giving the stuff up, these cookies are for you right now (and for you crazies who have given it up these are for you for later)

They're rich and chewy and perfectly crispy on the edges. Just yum!

And since it was Mother's Day yesterday big shout out to my fellow mummies/mammies/mommies (you know depending on where you're from we're all called something a little different) I hope your special little people spoilt you rotten. Breakfast in bed, Box of chocolates the size of a toddler (I'll admit actually receiving this after 2 years of not so subtle hints) or a nice box of smellies.

And if you weren't even more reason to bake these cookies, let the smells linger and float through the house till those special little people come running to the kitchen only to find a plate full of crumbs because mummy ate them all.

They won't forget next year trust me.

Ingredients:

130g /  1 Cup Plain Flour
45g / 1/3 Cup Cocoa Powder
1/2 Tsp Baking Powder
1/2 Tsp Salt
75g / 5 Tbsp Butter
100g / 1/2 Cup Caster Sugar
100g / 1/2 Cup Packed Light Brown Sugar
1 Egg
1 Tsp Vanilla Extract
100g / 2/3 Cup White Chocolate (Chopped)

Method:

Preheat your oven to 180c / 350f and line 2 baking sheets with greaseproof paper.

In a large mixing bowl beat together you butter and the sugars till light and fluffy.

The mix in the egg and vanilla extract till fully combined.

Now sift in the flour, baking powder, cocoa powder and salt and fold into the butter mixture.

Then stir in the the chocolate chunks.

Divide the cookie dough into 12 equally sized balls and place six on one tray and six on the other.

Bake for 10-12minutes and allow to cool for at least 10 minutes.
